OTA Updates (Over-the-Air Updates) have been introduced with iOS 5. In current betas the OS contacts http://mesu.apple.com/assets/com_apple_MobileAsset_SoftwareUpdate/com_apple_MobileAsset_SoftwareUpdate.xml to check for updates. These updates are delivered in ZIP files.
